Potato Bhaji/ Kachrya


Potato काचऱ्या is a delicious bhaji enjoyed all year round.

Serves approximately 2


Ingredients:

Potatoes (बटाटे)                  300 gms 

Oil                                    1 tsp
Mustard Seeds                  1/4 tsp
Asafoetida                         1/2 tsp
Turmeric Powder                1/2 tsp
Green chillies                    3 (Cut into 1 inch pieces)
Salt                                  To taste(~3/4-1 tsp)
Fresh Coconut                   To garnish (scraped)
Coriander Leaves               To garnish (chopped)

Method:

1.Wash, peel and slice the potatoes into triangular shaped , काचऱ्या (Just quarter and slice the potatoes) 
2.Heat oil in a non-stick pan and add the mustard seeds and wait for them to pop.
3.Next, add the green chilli pieces, asafoetida and turmeric powder.
4.Add the sliced potatoes to the pan.
5.Stir well and cover the pan.Cook the bhaji over medium heat, stirring occasionally.This will take about 10-15 minutes.
6.When the potatoes are al dente add the salt and mix well.Once cooked,garnish with coconut and chopped fresh coriander, and your bhaji is ready!

The bhaji is eaten with poli. Alternatively,you can use this as a filling for your sandwich.

This can stay in your refrigerator for about 2 days but tastes best when fresh.
