Red Pumpkin Peel Chutney

This chutney has a slight nutty-spicy flavour and tastes great as an accompaniment with meals or a plain parantha. The easiest way to separate the skin from the flesh is to grate the pumpkin skin with the flesh on, while making sure you don't get any fleshy bits.


Serves 2 (as an accompaniment!)


Ingredients:



Grated Red Pumpkin Peel/Skin      50 gms
Green Chillies, Finely chopped       3
Sesame Seeds                             3 tsp
Salt                                             1/2-3/4 tsp
Sugar                                          1/2 tsp

Oil                                               2 tsp
Mustard Seeds                             1/4 tsp
Asafoetida                                    1/4 tsp
Turmeric Powder                           1/4 tsp

Method:

1.Toast the sesame seeds.
2.Heat oil in a pan and add mustard seeds.After they pop,add chiili, asafoetida and turmeric & saute the mix.
3.Add grated pumpkin skin.Saute it for a minute or two on low flame.
4.Add the toasted sesame seeds and mix well.
5.Add salt and sugar and mix again!

That's it...You're done!

This recipe can be stored in the refrigerator for 3 days.
It will give you approximately 95 calories.
