Solkadhi

Solkadhi, (Pronounced 'soul-curd-he') is a delicious appetizer using coconut milk as the base ingredient.


Here's my family recipie.



Ingredients

4-5 Tbsp      Kokum syrup (the sugared variety)
200 ml         Coconut milk (thick)
200 ml         Water
1 large         Garlic clove, crushed
1 medium     Chilli ,split lengthwise
Salt to taste
Corriander to garnish


Method

1. Mix all the ingredients in a glass bowl and let sit for an hour or so in the refrigerator.
2. Strain the liquid to get rid of all the bits of garlic and chilli.
3. Add Finely chopped corriander and serve chilled.

This is a popular accompaniment with meat preparations along the west coast but makes a great appetizer too.
