Dudhi /Bottle gourd Bhaji

Bottle gourd is considered very medicinal according to Ayurveda.This bhaji is believed to be cooling and diuretic.The vegetable is known to treat stomach acidity, ulcers and indigestion.It is also considered beneficial for healthy hair.
Here's a simple, delicious low-call bhaaji.





Recipe for Dudhi/Bottle gourd Bhaji

Serves 2

Ingredients:
Dudhi ( Bottle gourd)250 gms
Moong dal ( Green gram dal)15 gms
Green chilli1, cut into 3 pieces
Oil2 tsp
Mustard seeds1/4 tsp
Turmeric powder1/4 tsp
Asafoetida1/4 tsp
Milk25 ml
Water150 ml
SaltTo taste, ~ 1/2 tsp

How to make Dudhi/Bottle gourd Bhaji
1.Wash and soak the dal in water. Drain it after 10-15 minutes.Save the water to add to the bhaji later.This way we can retain all the water soluble nutrients in the dal.
2.Wash, peel and chop the bottle gourd into small cubes.
3.Heat oil in a pan. Add the mustard seeds, once they crack, add asafoetida and turmeric powder.Add the green chilli pieces.
4.Add the dal and saute for about 2 minutes.
5.Add the chopped bottle gourd and mix well.
6.Add the milk, water and salt. Cover and cook for 20-25 minutes, stirring occasionally.
7.Once cooked, garnish with fresh coconut and coriander.

This bhaji is served with poli or bhakari.
It should be consumed on the same day.
This recipe gives about 160 calories.
