Sugarcane Juice triggers individual memories for every generation. My gran associates the thirst-quencher as a special summertime treat. My mum remembers having it after her tests, when she and her friends would discuss their respective answers and then worry about their scores until the results were declared ! Recipe for Sugarcane Flatbread / Usachi Bhakari:
Makes 3 Flatbreads/Bhakaris
Ingredients:
How to make Sugarcane Flatbread / Usachi Bhakari:
1. Pour the fresh sugarcane juice in a pan and bring it to a boil.
2.Next, add 1 tsp ghee and salt to the pan and turn off the heat.
3.Add the rice flour to the juice, a little at a time.You might have to adjust the quantity of the flour.
4.Grease your palms with the remaining bit of ghee to bring the dough together. We're aiming for a soft yet non sticky dough.
5.Let it rest for about 5 minutes.
6.Divide the dough into 3 equal portions. Roll out each one of them onto parchment paper into circles of ~6" diameter.
7.Heat a griddle and place the rolled out bhakri on it. Cook both sides on a low to medium heat.
8.Serve hot with white butter or ghee and a pickle or chutney of your choice. Haldicha Loncha/Fresh Turmeric Pickle tastes great with these.
* Since the recipe has a high sugar content, the surface tends to caramelise and subsequently darken very quickly. Thus , these need to be watchfully made.
